The Mutual Promise “Compr. Missum” wine is from a small parcel of Nebbiolo fruit from the Darling family’s Koombahla vineyard in Victoria’s North East. The fruit was guided through ferment and elevage at Beechworth’s Mayday Hills lunatic asylum with the assistance of Mark Walpole and Adrian Rodda. Gently destemmed and fermented for 30 days in a large open top fermenter, before transfer to old puncheons for a nine month elevage. Aromatics of green pepper and paprika, the wine has the varietal hallmarks of acid and tannin.
