“Made very much with great Blanc de Blanc as an inspiration. Though also with cloudy Weiss Bier in my mind. King Valley Chardonnay Sparkling base was refermented in bottle a la Champagne, though to about 4.5 atmospheres rather than 6. This cloudy, funky Chardonnay has classic Granny Smith crunch with nuances of nectarine and white current. So if you’ve had a white current of a day open a second bottle and listen to Bach.
